Zucchini

It is best to consume zucchini when it is very young as it is then that it still maintains not only the best taste attributes but is exceptionally light to digest. Zucchini may be added to a children’s menu, people recovering from illness or those suffering problems with the digestive system. Easily digestible and low calorie content are attributes making the zucchini one of the best liked vegetables in weight loss diets.

Pumpkins come from America where at first only their seeds were consumed. They found their way to Europe in the 16th century together with other “interesting curiosities” brought from the New World. At first the zucchini as most new unknowns was cultivated in botanical gardens. Today, it’s hard to imagine the Mediterranean cuisine without it. It is assumed, that it was the Italians who in the 18th century began to prepare not fully ripe zucchini as we do today.
