Tom Yam Kung – the most famous of Thai soups, made on a base of chicken stock with mushrooms, lemon pieces and leaves and favoured by all Thais.

Ingredients
20 prawns
4-5 cups water
3 shallots
2 lemon grass
2 tbsp fish sauce
20 medium mushrooms
6 lime leaves
3 tbsp lime juice
2-3 chillies
5 coriander leaves
1 spring onion
Preparation
- Wash prawns; clean them, leaving the tails. Wash and chop mushrooms.
- Pour water into a pot, add shallots cut up finely, lemon grass and fish sauce. Cook for at least 3 minutes.
- Add mushrooms, prawns and cook until prawns turn pink.
- Add lime leaves, lime juice and chilli.
- Then cover the pot and set aside.
Serving:Decorate the soup with coriander and chopped spring onion. Serve hot.
