Sweet and sour pork is a combination of the power of yin and yang in culinary art – it is Chinese balance of contradictions.

It is the cook’s job to combine the flavours and create ideal harmony. Therefore hot must reside next to the cold, and sweet next to the sour.

Ingredients

500 g pork
2 fresh green chilli pepper
1 large onion chopped into cubes
4 tablespoons pineapple juice
3 pineapple slices, chopped into cubes
3 tablespoons oil
1 teaspoon ground ginger
2 cloves minced garlic
salt

Preparation
  • Cut chilli peppers lengthwise, remove seeds and chop into small slices.
    Chop pork into small long strips.
  • Fry onion, garlic and chilli in a frying pan for 3 minutes with 2 spoons of oil.
  • Use the remaining oil to fry meat separately, seasoning it with salt and ginger.
  • Add pineapples, onion mix and add pineapple juice. Cook everything over low heat for 3 minutes stirring constantly.


Serving:Serve with rice.
