Ingredients
500 g fresh beans
18 medium-sized shrimp
salt
Bean seasoning:
1 cup fish broth
3 tablespoons sake
1 tablespoon mirin
¼ tablespoons soy sauce
¼ teaspoons salt
Shrimp seasoning:
4 well beaten egg yolks
6 tablespoon fish broth
1 tablespoon mirin
¼ cups sake
½ tablespoon salt
Vegetables:
1 large carrot
1 medium broccoli
1 bamboo sprout
1 cup dashi
½ cup sake
3 tablespoons mirin
3 tablespoons soy sauce
Preparation
- Julienne bamboo sprout, cut broccoli florets into smaller pieces, cut out ‘flowers’ from carrots. Cook the carrot and broccoli for a moment, and then let them cool.
- Mix fish broth, soy sauce, mirin, add salt – cook it all in a skillet. Then add bamboo, carrot and cook over low heat under a heavy cover for about 6 minutes – until bamboo becomes slightly brown. Sprinkle vegetables with broth before serving them and decorate them with broccoli florets.
- Clean shrimp, leaving tails, add a little salt, then dip each one in potato starch, shake excess flour. Bring to boil 2 cups of water, add shrimp and cook no longer than 10 seconds. Drain them, rinse in cold water and let sit.
- Boil 2 glasses of water, clean beans, cut them into long diagonal strips 1,5 cm each. Sprinkle them with salt and cook in water for about 8 minutes, then drain, rinse with cold water. In a skillet mix ingredients for bean seasoning, bring everything to boil and add beans.
- In another dish mix ingredients for shrimp seasoning, boil, add shrimp, turn down the heat and gently add egg yolks. Then cook covered over low for about 2 minutes.
ServingPut shrimp into a platter, decorate with beans. Serve vegetables separately.
