Scorzonera in flavour reminds us of asparagus, but it is more delicate. Before using it, we need to wash it carefully, then peel it (best with rubber gloves), since its juice colours things in red. The plant’s edible part is its root and leaves. Scorzonera is a great plant to freeze or put in tins, since when it is frozen or tinned, it keeps its nutritious value.
