Salsify

Salsifies in the kitchen
Salsify is considered to be a valuable vegetable in terms of its flavour and nutrients. The edible part - the root, has a yellowish-grey colour. Salsify is a highly caloric vegetable and it can be used in salads, or soups; it can also be sautéed, steamed, or fried by itself or with other vegetables. It can be used as a single dish, a side dish or with meat, eggs or fish.
For strength
Because of the richness in vitamins and nutrients, salsifies are recommended for people on special diets, with weak, or sensitive bodies. People who are worn out physically and mentally are advised to eat salsify, as well as those who have had serious, strenuous illnesses.
Respectable purple
Salsify is also used as a decorative plant – it has really decorative purple flowers.

Instead of coffee
The root of the salsify - after roasting - can be used as a substitute for coffee.
