Recipe for risotto country style – an exquisite Italian rice dish, probably brought to Italy from China with Marco Polo, the traveller.

Ingredients
300 g rice
300 g kale,
130 g beans soaked in water for 12 hours
100 g fresh bacon
2 celery stems
1 onion
1 carrot
3 tomatoes
50 g butter
1,2 l meat broth
125 ml red dry wine
salt, pepper
Preparation
- Wash kale, tear leaves into small pieces.
- Wash celery stems and chop them finely. Wash carrot, julienne it. Skin tomatoes previously heated in boiling water, deseed and chop them.
- Pour broth over vegetables and beans and cook them under cover, medium heat for about 2 hours.
- Cut bacon into cubes. Chop onion finely, and fry it with rice, bacon and butter for 3 minutes, then add red wine. Stir constantly until wine evaporates.
- Add broth and vegetables with beans, cook for additional 15 minutes, remembering to stir occasionally.
- Season with pepper and salt. Cool for 3 minutes before serving.
