Recipe for paella á la Valencia – classic, a traditional Spanish dish, originated in beautiful Valencia.

If you have visited beaches of Valencia at least once in your life, you will want to spend there another holiday, eating delicious dishes from the Spanish cuisine. The name is derived from the way a big pan was called – paelleria, where it is usually prepared.

750 g chicken
500 g rabbit meat
400 g rice
250 g green beans
200 g beans
100 g tomatoes
50 ml oil
800 ml water
1 teaspoon sweet pepper
pepper, salt, saffron
Preparation
- Rinse white, big beans, put them in a dish and pour in cold, previously boiled water. Soak them for 12 hours then cook in the same water.
- Wash chicken and rabbit meat thoroughly and cut it into pieces. Rinse green beans. Skin tomatoes by soaking them in hot water first and then chop them into pieces.
- Heat oil in a large frying pan, fry all sides of chicken pieces, then do the same with the rabbit meat. Add beans and fry them for 2-3 minutes. Add cooked beans and chopped tomatoes. Add pepper and stir. Pour rice in slowly and stir it with a wooden spoon. Add saffron and salt. Cover with water, bring to boil and cook over small heat under cover. Stop stirring.
- Cook paella no longer than 18-20 minutes. Take it off heat and set aside for 5 minutes to ‘come’.
Serving:Paellia is served with a wooden spoon. You can use lemon quarters and parsley for decoration.
