Eyes feast on the beautifully served dishes, the food smells tease with their exotic aromas and the diversity of tastes are truely breath-taking. Each meal consists of an entree - mainly a salad, a main course, pastes, pickles as well as fantastic breads – ćapati that is consumed with vegetables and rice. Indians believe that food is a gift from gods and as such, preparation and consumption of meals requires seriousness, respect and concentration.
Many interesting dishes are prepared from lentils, beans, zucchini, aubergines and also simple tomatoes, cauliflower or spinach.

The ban on eating beef is a consequence of the cult of holy cows and the eating of beef is considered to be a sacrilidge. On the other hand, dairy products such as joghurt (dahi) are especially popular. In many Indian homes, a meal is seen as incomplete without even just a spoonful of dahi. This also has a more practical justification. Caisin, which is contained in dairy products including yoghurt, can effectively quench thirst evoked by terribly spicey meals.

A kingdom of spices
As a result of traditions as well as historical factors, Indian cooks have become true masters of spices. The vast majority of India is vegetarian and therefore, the skillful use of spices has become a real art form. Amongst the many herbs and spices that are used in the Indian cuisine, the following must be mentioned: caraway, coriander, turmeric, cardamon, red and green chili, cinammon, saffron, cloves, nutmeg, ginger, aniseed, sesame, onion and garlic.

Experts agree that the Indian cuisine is not only tasty but also healthy. The small amount of meat mixed with vegetables or fruit, fried shortly or stewed in a wok plays a big role in this. According to experts, this prevents carcinogenic factor build up in the body and also protects against obesity and diabetes.
