Vegetables are a rich source of various vitamins and minerals, which are beneficial to us. They complement ready-made meals in a great way – it’s good to serve at least two vegetables with our meals, especially if we eat these kind of dishes quite often.
Ready-made meals and take-outs can be quickly spiced up by adding vegetables to them, or instant frozen peas or tomato slices. If you serve frozen fish fingers, we recommend frozen peas and corn to accompany them.
Here are a couple ideas to embellish ready-made meals:
- On the top of pizza, you can put drained canned tomatoes (best if they are with herbs, spices or garlic) and frozen vegetables, for instance chopped spinach, broccoli, peas and corn. Sprinkle it all with cheese or breadcrumbs.
- On frozen lasagne, you can put thick slices of courgette and tomatoes. Sprinkle all of it with shredded parmesan and bake the dish. Serve it with some salad.
A ready-made Mexican dish can be served with instant salsa, prepared on the spot. Cube some tomatoes, a cucumber, an onion and some celery. Mix all the ingredients and season it with salt and pepper. Add cubed fresh chilli peppers and freshly chopped coriander. - On frozen tart it is good to add a layer of vegetables and bake it until it’s hot and the vegetables turn soft. It’s worth recommending slicing up some mushrooms and tomatoes and julienne all coloured peppers and courgette slices.
- When you buy pancakes or tortilla you can fill them with chopped frozen spinach; you don’t have to defrost it, you can use spinach rolls, mixed with low-fat cottage cheese and chopped chibol/spring onion. Put them in heat-resistant dish, pour 1- 2 tins of chopped tomatoes with herbs, sprinkle some grated cheese on everything and bake.
- With Indian meals, you can prepare a salad resembling raita. You need to mix cubed cucumber with chibols/spring onions, shredded carrots and chopped water-cress or coriander with low-fat natural yoghurt. Sprinkle with freshly chopped mint and a bit of powdered chilli.
- For Chinese dishes we recommend a simple oriental salad. Mix fresh bean sprouts with chopped chibol/spring onion, bamboo sprouts from a tin and sliced water caltrop. Serve this salad on leaves of Chinese/napa cabbage sprinkled with a bit of sesame oil and soy sauce
