Nutritious value in cold cuts We should remember though that highly processed meats are deprived of their nutrients, as they’re high in salt, fats and preservatives. To produce cold cuts the following products are used: pork, beef, spices, functional additives i.e. soya proteins, carrageenan, fibres, and pickling mixes.

Cold cuts can be divided into: 

  • Imperishable meats, stored for up to 6 months, e.g. dried sausages, raw sausages (salami type) or smoked meats
  • Semi-imperishable, stored up to 1 month, e.g. less well smoked meats
  • Perishable meats should be used within a couple of days, their water content can be up to 45%
