In the past groats used to be very popular. Before potatoes became a common part of meals, groats were a important staple of meals. Today they aren’t so common as before, but they are really healthy and it would be good to return to them.

Nutritious value
Groats – especially buckwheat and barley – are a rich source of nutrients and vitamins.Proteins. They are the main building material for the cells. To raise the nutritious value of vegetable proteins , it’s good to combine groats with dairy foods of animal groups, such as poultry, eggs, milk and cheeses.
Vitamins and mineral salts. All kinds of groats contain a lot of vitamin B1, phosphorus, potassium, magnesium and iron. Since these elements are mainly found right under the surface of the earth, the richest source of them is groats which are whole-meal, after cleaning them only. They also contain the most fibre which is essential in regulating our digestion and stimulating the work of the intestines.
A tasty and healthy addition
The best kinds of groats in soups are barley – Pearl barley or quick-cooking barley. We can make barley soup with millet or wheat groats. Groats prepared in a loose form can be used in second courses, especially with meat. Loose groats are also great in salads and in vegetarian dishes, for example for croquets. With sweet legumes, we use cream of wheat, couscous, cornmeal and millet-groats.
Groats healWe can make stews from cream of wheat, couscous and grits, for those who suffer various ailments of the alimentary canal, liver, bile duct, kidney and to convalescents after operations. It’s a light dish providing the body with carbohydrates.
In fighting off constipation, it‘s good to introduce thicker groats and bran to our diet. Eating thick groats prevent polyps from developing in the large intestine, and, therefore, protects against intestinal cancer.
