Ingredients

Omelette:
6 eggs (egg whites)
200 g chicken breasts cooked
200g fresh mung bean sprouts
100g mushrooms
100 g celery
1 onion
1 spring onion
salt, pepper
oil

Sauce:
½ cup chicken stock
2 tbsp soy sauce
1 tbsp rice wine
1 tbsp cornstarch
3 tbsp water
1 tbsp oil
white pepper

Preparation
  • Chop chicken into small pieces, slice mushrooms and celery. Add sprouts and stir all ingredients together. Chop onion, heat oil in a wok, then sauté onion then add the remaining ingredients.
  • Fry stirring constantly, add salt and pepper. Set aside to cool.
  • Beat the eggs, add them to the fried meat and vegetables then combine all ingredients. Again heat up the oil in the wok, pour in the egg mixture, fry the eggs by moving them gently with a spatula from one side to the other. When the omelette is set, flip it and fry it until the rims are browned.
  • Sauce: cook stock in a pot, add soy sauce, wine and pepper. Turn off the heat. Combine flour with water; slowly add to the stock, stirring until sauce is thick. Add oil, stir again. Heat up the sauce and stir and then pour over the omelette.
  • Re-heat the sauce and stir, pour over the omelette.
