Egyptian cuisine

Egyptian cuisine has a lot in common with Turkish, Arabic or Greek.

Egyptian cuisine is considered by many to be quite heavy but also quite original. therefore not all the tourists are fond of it. But undoubtedly it deserves our attention. Traditional Egyptian dishes consist of rice with vegetables and meats. Dishes are seasoned with oil, salt pepper and onions with garlic, as well as aromatic herbs, such as cumin, dill or mint.

Egyptian bread is present on every table. Egyptians roll flat pieces of bread into “cat’s ears” filling them with food. Therefore they do not need cutlery, unless for soups.

At breakfast and lunch in Egypt, most often green soup is served. It is made of a green vegetable moloheja, similar to spinach. Also mahszi is served, a dish reminding stuffed cabbage. The stuffing consists of rice and beef with herbs. Such stuffing is wrapped in all kinds of ways. Mahszi kromb is with grape leaves, or cabbage leaves. The stuffing can be also served in tomatoes – as mahszi tomatom, or zucchini – as machszi kusa, as well as in aubergine – mahszi bitengen. Vegetables prepared that way are baked in the oven and served immediately after baking, for when it cools, it looses its flavour. In the morning Egyptians have something resembling sandwiches – taameia. They consist of a cutlet placed between two pieces of bread. The cutlet may be made of beans, chick peas with spices with a fresh lettuce leaf. Foul is another traditional dish. It is made of ground and fried broad bean. The stuffing is placed in shamma bread, similar to pita bread. In many Egyptian restaurants you can find a variety of taameja and foul, served with butter, meat, or egg. Torshi is made of pikle vegetables. Bread with paste is a popular snack in Egypt. The bread is known as a'aish and there are many kinds of it. One of them is a'aish baladi, flat and round like a plate. There is also a bread similar to bread rolls, called 'aish fransawi’, which means ‘French bread’. Bread is served with tahina –sesame sauce, with lime juice and garlic. Bread is also served with babaganuk sauce, made of aubergine, garlic and parsley paste.

Egyptians have their own pizza, called fiteer, which is soft dough baked in the oven. Such pizzas are prepared with a client observing and telling the cook which ingredients to use. You can choose from eggs, cheeses, tomatoes, meats or various vegetables. The stuffing can be placed inside the dough or on the top. It can be spicy or sweet.
 

Soups that have been prepared for centuries

Soups are very popular in Egypt. Moloheia is served for lunch, or so called ads – this is thick bean soup. Vegetables such as aubergines or tomatoes are fried in tomato sauce with garlic; pasta dishes are popular too, this can be lasagne with mince and white sauce. Vegetarians will choose musaka – a mixture of aubergine, tomatoes, garlic, oil an spices, all baked in the oven. 

 

A lot of meat, less fish

Salads, bread, meat and a lot of extras – this is the base of an Egyptian dinner. Some examples of Egyptian dinner dishes may be roast chicken (firekh) or pigeon (hamam) stuffed with rice and spices. But most popular and favoured dishes are koftas and kebabs, made of roast or grilled meat. Kofta is usually made of mince, and kebab consists of lamb, served with parsley or fried tomatoes with onions, as well as with bread, lettuce and tahini. In Alexandria, the largest Egyptian harbour, or other sea towns many fish and seafood dishes are served.
