Peking style duck recipe is the most famous of Chinese dishes, served not only in Beijing restaurants but also all over the world.
Product description
The duck meat from the ducks raised not far from Beijing is very tasty. The preparation process is quite complicated: the duck is lacquered with molasses, pumped with air and filled with boiling water. The duck is best roasted suspended in a special clay-lined oven with wood from mixed fruit trees.

Ingredients
Duck:
1 duck (about 2 kg)
2 tbsp say sauce
2 ½ tbsp brown sugar
1 tbsp wine vinegar
12 spring onions
1 cucumber
Hoisin sauce:
250 g plum jam
3 tbsp soy sauce
1 tbsp sherry
sinnamon, hot pepper, powdered ginger
Chinese pancakes:
4 cups flour
1 ¼ cup boiling water
2 tbsp oil
salt
Preparation
- Put the duck into boiling water for 3 minutes. Drain, dry and hang overnight to dry.
- Mix soy sauce, brown sugar and wine vinegar. Coat the duck in the mixture and hang for additional 4 hours.
- Pre-heat the oven to 190 ºC, place the duck on wax paper with a roasting pan filled with water underneath. Roast for 30 minutes. Turn down the heat to 150 ºC and cook for 1 hour.
- Chinese pancakes: mix flour and salt, add water, knead it with your hands, cover it and let it rest for about 15 minutes. Form it into a roll about 5cm thick. Cut the roll into equal pieces and shape each one into a ball. Dip one side of one ball into oil and place the oiled side on top of the other ball. With a rolling pin, roll the 2 pancakes simultaneously into a circle about 15cm in diameter. Put the double pancake into the pan and cook it for 1 minute, do not brown it. Fold in half and keep warm during the duck preparation.
- Sauce: mix soy sauce, plum jam, sherry and seasoning. Heat it up in a frying pan, constantly stirring. Cool it and then refrigerate.
- Slice on the diagonal spring onions and cucumber.
- Slice roasted duck, place the slices on pancakes with a few strips of cucumber and spring onion and a teaspoon of plum sauce.
