Cichorium endivia
An annual vegetable originating from the Mediterranean coast and southern Asia Since XVI century cultivated In Europe.
Chicory contains vitamins and minerals, but have somewhat spicy and bitter in taste.

Chicory contains a lot more vitamins and minerals than traditional salads and the substances contained in chicory  inulin and intybina decidedly boost the appetite.

Do you have chicory?

Few people know that a commonly used expression in some countries “have you chicory” meaning fear, originated from this vegetable. Chicory has pale leaves and a delicate angled, weak shape – looking like a “frightened vegetable”. It’s a vegetable which grows almost in complete darkness needing little sunlight, which in olden days brought about many suspicions. Chicory was once regarded as an unclean vegetable and it’s said it was used in black magic…

Chicory leaves have a spicy, slightly bitter taste and are often used in the form of salads. They are suited to salads, strong cheeses, nuts, beetroot, or with pieces of apple or pear.

We can eat chicory leaves with drops of oil and lemon, or by covering the leaves with various mixtures – of egg, cream cheese, fish or meat. It can be cooked  in the oven, steamed, grilled or sautéed. A popular dish is chicory soup with added cheese, garlic and lemon.
