The chick pea comes from the Near East, which it reached from north Africa and India. The Phoenicians brought to Spain. It completed its triumphant march through Europe at the basin of the Mediterranean Sea because it needs a dry and warm climate. The Spanish in turn took it to America. It made its home, among others, in the Mexican, Spanish, Italian and Indian cuisine. However, it is primarily a symbol of the oriental cuisine.

Travellers and tourists may be surprised by the diversity of forms in which the chick pea finds its way to the table. In Arab countries it constitutes the main ingredient for such characteristic dishes of that region of the world as: hummus (mashed), falafel (a warm appetizer in a shape of balls) or cuscus. It is also ground into flour, which is added to sauces or used to prepare coffee substitute. Chick peas are also added to soups and salads. In India and Pakistan young pods are eaten as vegetables. Its baked seeds are a delicacy in the Orient.
