Ingredients
½ kg kidney beans
1 carrot
2 onions
2 celeries
3 thick bacon slices
1 tsp dried oregano
1 heaping tbsp cumin
1 small cup dry sherry
2 cans chopped tomatoes
½ lemon juice
Salt, pepper
Additionally
1 lime
1 avocado
1 green onion
Fresh coriander
Fresh chili peppers
Garnish
1 bay leaf
2 parsley twigs
2 thyme twigs
1 rosemary twigs
Preparation
- Soak the beans in cold water for about 4 hours. Tie the herbs with a long string to make a garnish bouquet
- Fry the chopped carrots, onions and celery with garnish bouquet in some olive oil. Drain the beans and cover them with fresh cold water so that the beans are 5-8 centimeters under the water.
- Bring them to boil, cook for 10 minutes over medium flame, then reduce the heat and cook for 2-3 hours until the beans are tender. Add salt to the beans when they are tender.
- Add the fried vegetables with bacon, season everything with oregano and cumin. Add sherry, lemon juice and tomatoes. Flavour with salt and freshly ground pepper.
- Bring the soup to boil, reduce the heat and cook for about 30 minutes.
- Puree some beans against the wall of the pot with a fork or spoon, so that the soup is thicker.
- Cube avocado and green onion, chop coriander and chili peppers.
Serving suggestion:
Remove the garnish bouquet from the soup. Serve it with pieces of avocado, green onion and chili as well as the chopped coriander. Sprinkle each portion with ¼ lime juice.
