Alfajores - argentine cookies with toffee

In many Latin American countries and in Spain you can see cakes called Alfajores but they are something totally different.
Product description
Alfajores – biscuits popular in Argentina, filled with dulce de leche (sweet milk – toffee) or jam, can be sprinkled with confectionary sugar or covered with chocolate, dark or white.

Ingredients
100 g butter
150 g sugar
1 egg
2 egg yolks
200 g wheat flour
2 tbsp brandy
1 tsp vanilla extract
300g potato starch
½ tsp baking powder
Lemon peel of ½ lemon
dulce de leche (toffi)
desiccated coconut
Preparation
- First make the dough. Melt butter and sugar, add 1 egg, egg yolks, vanilla, baking powder, corn starch, lemon peel and mix all the ingredients with flour until smooth.
- Make round cakes, 2,5 – 3 cm thick and 5 dm in diameter. Spread over baking paper and bake for 20 minutes in 150°C.
- When cakes are cold, spread dulce de leche (toffee) over one and gently press one over the top.
- Roll the cakes in desiccated coconut.
